Peshawar does not really do subtle. The meat is charcoal-blackened and salted hard, the kababs are the width of a side plate, and the tea arrives green, sweet and endless. It is one of the great eating cities of South Asia and it barely advertises the fact.

Start at Namak Mandi, where the karahi shops line up shoulder to shoulder and you pick your meat before it's cooked. Then work outward: Qissa Khwani for qehwa and the storytellers' bazaar, and the chapli kabab counters that people drive out of the city for.
