Quetta eats like a mountain city — slowly, warmly, and with a lot of meat. Sajji is the signature: a whole chicken or leg of lamb salted, skewered and turned beside an open fire until the skin goes tight and golden. It is not fast food, and that is rather the point.

Around it sits a tea culture borrowed from across the border, bakeries turning out roghani naan, and dry-fruit markets that are worth visiting for the smell alone. Come in the cooler months and eat late.
